From tree to cup

Like crafting a great wine, an impressive hands-on process is required to produce quality Kona Coffee. Here are the steps that it takes to get coffee from our trees to your cup.

STEP 01

Harvest the cherries

We hand select and pick only ripe cherries to be harvested throughout the season. By hand-picking, we are able to ensure that only the cherries which are at the peak of ripeness are chosen for our coffee.

STEP 02

Pulping & Separation

We then separate the skin and pulp from the bean and separate them to remove any defective beans.

STEP 03

Soak & Rinse

Next the beans are transported to large, water-filled fermentation tanks to remove the slick layer of mucilage, rinsed through additional water channels and prepared for drying.

STEP 04

Hulling & Grading

Once the pulped and fermented beans are dried, they are hulled to remove the protective parchment layer and graded by size and weight. The beans are also reviewed for color flaws or other imperfections.

STEP 05

Roasted to Order

This step transforms green coffee into the aromatic brown beans that we ship to your door. This is a critical part of the process and requires precision and timing. The difference between perfectly roasted coffee and a ruined batch can be a matter of seconds. We do our roasting in small batches to ensure freshness and consistency of flavor. After roasting, the beans are immediately cooled by air, put into bags, and shipped to you.
